  • 2 cups Greek yogurt, plain or vanilla (full-fat preferred, low-fat works too)
  • 2 tablespoons honey or pure maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 ½ cups rolled oats (old-fashioned oats recommended)
  • ½ cup chopped nuts (walnuts, almonds, or pecans)
  • ¼ cup maple syrup or honey
  • 3 tablespoons olive oil or melted coconut oil
  • 1 teaspoon cinnamon
  • Pinch of salt
  • Optional add-ins: ¼ cup shredded coconut, chia seeds, or dried cranberries
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • ½ cup fresh raspberries or blackberries (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, combine 1 ½ cups rolled oats, ½ cup chopped nuts, 1 teaspoon cinnamon, a pinch of salt, and any optional add-ins like shredded coconut or chia seeds.
  3. Drizzle ¼ cup maple syrup (or honey) and 3 tablespoons olive or coconut oil over the dry mix. Stir gently with a spatula until everything is evenly coated.
  4. Spread the granola evenly on the prepared baking sheet in an even layer.
  5. Bake for 20–25 minutes, stirring once halfway through to prevent burning, until golden brown and fragrant.
  6. Remove from oven and let cool completely on the baking sheet. Once cooled, break into clusters if needed.
  7. In a bowl, mix 2 cups Greek yogurt with 2 tablespoons honey (or maple syrup) and 1 teaspoon vanilla extract. Adjust sweetness to taste.
  8. Wash and prepare the fresh fruit. Slice strawberries and pat all berries dry to avoid soggy parfaits.
  9. Assemble the parfaits by layering a few spoonfuls of yogurt at the bottom of a glass or jar, followed by a layer of granola, then a layer of mixed berries. Repeat layers, finishing with berries and a sprinkle of granola on top.
  10. Serve immediately for best texture, or refrigerate for up to 2 hours if prepping ahead. Add granola just before serving to keep it crunchy.

Notes

Toast granola low and slow at 325°F to develop nutty flavor without burning. Stir gently halfway through baking to keep clusters intact. Cool granola completely before layering to maintain crispness. Dry berries thoroughly to avoid soggy parfaits. Store granola separately if prepping ahead to keep crunchy.
