Bright, crisp ribbons of colorful vegetables rolled into soft tortillas with a creamy herb spread, creating a quick, healthy, and satisfying snack or light lunch.

Ingredients

  • Large flour tortillas (10-inch/25 cm) – whole wheat or gluten-free if preferred
  • Cream cheese, softened (8 oz/225 g)
  • Greek yogurt (1/4 cup/60 ml)
  • Fresh dill, finely chopped (2 tablespoons)
  • Garlic powder (1/2 teaspoon)
  • Salt and black pepper to taste
  • Red bell pepper, thinly sliced
  • Orange bell pepper, thinly sliced
  • Yellow bell pepper, thinly sliced
  • Cucumber, peeled and julienned
  • Carrot, peeled and julienned
  • Baby spinach leaves (about 1 cup/30 g)
  • Red cabbage, thinly sliced (1/2 cup/50 g)
  • Fresh lemon juice (1 teaspoon)

Instructions

  1. Rinse all vegetables well. Slice red, orange, and yellow bell peppers into thin strips about 2-3 inches long and 1/4 inch wide. Peel and julienne the carrot and cucumber into similar thin strips. Thinly slice the red cabbage and roughly chop the baby spinach leaves if large.
  2. In a medium mixing bowl, combine softened cream cheese and Greek yogurt. Stir in chopped fresh dill, garlic powder, lemon juice, salt, and black pepper to taste. Mix until smooth and evenly blended (about 3-5 minutes).
  3. Lay a tortilla flat on your work surface. Spread a thin, even layer of the cream cheese mixture over the entire surface, leaving about a 1/2 inch border around the edges.
  4. Arrange the bell pepper strips, cucumber, carrot, spinach, and red cabbage in neat rows across the tortilla in a single layer.
  5. Starting at the veggie-filled edge, roll the tortilla tightly into a log shape. Use plastic wrap to hold the roll tight if needed. Refrigerate for at least 30 minutes to set.
  6. Unwrap the roll and slice into 1-inch thick rounds using a sharp serrated knife. Lay each pinwheel flat on a serving plate.
  7. Serve fresh or store covered in the refrigerator for up to 2 days.

Notes

Pat watery vegetables like cucumber dry before layering to prevent sogginess. Chill the rolled wraps for at least 30 minutes before slicing for neat pinwheels. Use a sharp knife for clean cuts. Vegan and grain-free adaptations are possible by substituting spreads and wraps.
