  • 1 pound (450g) mini mozzarella balls (bocconcini), drained
  • 1 pint (about 250g) cherry or grape tomatoes, halved if large
  • 2025 fresh basil leaves
  • 23 tablespoons balsamic glaze
  • 1 tablespoon extra virgin olive oil
  • Sea salt to taste
  • Freshly ground black pepper to taste
  • About 20 mini clear plastic cups (2 oz size)
  • About 20 wooden toothpicks or small skewers

Instructions

  1. Rinse cherry tomatoes and basil leaves thoroughly. Slice tomatoes in half if large. Drain mini mozzarella balls well to avoid excess moisture.
  2. In a medium mixing bowl, gently combine mozzarella balls and halved tomatoes. Drizzle with 1 tablespoon extra virgin olive oil, sprinkle with sea salt and freshly ground black pepper to taste. Toss gently to coat evenly.
  3. Thread one mozzarella ball, one basil leaf (folded if large), and one cherry tomato half onto each toothpick or mini skewer. Repeat sequence for a longer skewer if desired.
  4. Place 2-3 mini skewers into each mini cup, standing upright for easy serving.
  5. Just before serving, drizzle a small amount of balsamic glaze over the skewers in each cup to avoid sogginess.
  6. Optional: Chill the cups in the fridge for 10-15 minutes to let flavors meld and serve cool.

Notes

Use small-curd or bocconcini mozzarella balls for best texture. Drizzle balsamic glaze just before serving to prevent sogginess. If tomatoes are too soft, they may break on skewers. Fold basil leaves gently to avoid bruising. Store components separately and assemble just before serving for best freshness.
