  • ½ cup (120 ml) sour cream (or Greek yogurt for protein boost)
  • 34 stalks fresh green onions, finely chopped
  • 1 small red bell pepper, finely diced
  • 1 small yellow bell pepper, finely diced
  • 1 small green bell pepper, finely diced
  • ½ cup (75g) cherry tomatoes, quartered
  • ¼ cup (30g) black olives, sliced
  • ½ cup (120 ml) salsa (mild or medium)
  • 2 tbsp fresh parsley or cilantro, chopped
  • Salt and pepper, to taste
  • Optional: ½ tsp garlic powder

Instructions

  1. Let cream cheese sit at room temperature for about 15 minutes to soften.
  2. In a medium bowl, combine softened cream cheese, sour cream, garlic powder (if using), salt, and pepper. Stir until smooth and well blended.
  3. Finely dice the red, yellow, and green bell peppers. Quarter the cherry tomatoes, slice the black olives, and finely chop the green onions and parsley or cilantro.
  4. On a large piece of plastic wrap, spread half of the cream cheese mixture into a thick circle about 6 inches (15 cm) in diameter.
  5. Add a layer of green onions and black olives evenly on top of the cream cheese layer.
  6. Spread the remaining cream cheese mixture over the veggie layer, smoothing gently.
  7. Carefully arrange the diced bell peppers and cherry tomatoes on top, dividing the colors into sections to mimic a beach ball pattern.
  8. Using the plastic wrap, gently fold and pull the edges around the layered mixture to form a smooth ball. Twist the wrap tightly to secure.
  9. Place the wrapped ball in the fridge for at least 1 hour to firm up.
  10. Unwrap the ball carefully onto a serving plate and garnish with fresh parsley or cilantro.
  11. Serve chilled with crackers, sliced baguette, or fresh veggies for dipping.

Notes

Use room temperature cream cheese for easier mixing and shaping. Finely dice veggies for smooth layering. Keep the dip chilled to maintain shape and vibrant colors. Can be made dairy-free by substituting cream cheese and sour cream with plant-based alternatives. Optional garlic powder adds a subtle savory hint.
