  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 large red bell pepper, diced

  • 1/2 cup fresh cilantro, chopped
  • 1 large avocado, diced (optional but recommended)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons fresh lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small garlic clove, minced

Instructions

  1. Preheat your grill to medium-high heat (about 400-450°F). While it’s heating, husk the corn and remove as much silk as possible. Rub the ears with a dry paper towel to pull off stubborn strands.
  2. Grill the corn for 12-15 minutes total, turning every 3-4 minutes. Look for charred spots on all sides—some kernels will pop and darken. Don’t walk away; corn can go from charred to burnt quickly.
  3. Let the corn cool for 5 minutes—just enough so you can handle it without burning your fingers. Then stand each ear upright on a cutting board and slice the kernels off with a sharp knife. Cut downward, rotating the ear as you go. You should get about 4 cups of kernels from 6 ears.
  4. While the corn cools, make the dressing. In a small bowl or jar, whisk together the olive oil, lime juice, cumin, smoked paprika, salt, pepper, and minced garlic. Taste it—it should be bright and slightly tangy. Adjust salt or lime juice as needed.
  5. Combine the black beans, bell pepper, red onion, jalapeño, and cherry tomatoes in your large mixing bowl. Add the grilled corn kernels while they’re still slightly warm—this helps the flavors meld.
  6. Pour the dressing over the vegetables and toss everything gently but thoroughly. Use your hands here because spoons never seem to mix evenly. The dressing should coat every piece without pooling at the bottom.
  7. Fold in the chopped cilantro and stir once more. If you’re adding avocado, dice it now and gently fold it in so it doesn’t get mushy.
  8. Taste and adjust seasoning—another pinch of salt, a squeeze of lime, whatever it needs. This is the most important step. Trust your palate.
