  • 2 tablespoons fresh dill, finely chopped
  • 1/2 cup Greek yogurt (full-fat recommended)
  • 2 tablespoons mayonnaise
  • 1 tablespoon balsamic vinegar
  • 1 small clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil

Instructions

  1. Wash and dry the cucumbers thoroughly. Using a sharp knife, slice them thinly—about 1/8 inch (3 mm) thick. Optionally, peel partially for a rustic look.
  2. Place cucumber slices in a colander or large bowl. Sprinkle with 1/2 teaspoon salt and toss gently. Let sit for 10 minutes to draw out excess moisture. After 10 minutes, gently squeeze or press with a paper towel to remove liquid.
  3. In a separate bowl, combine Greek yogurt, mayonnaise, balsamic vinegar, lemon juice, honey, and olive oil. Whisk until smooth and creamy. Add minced garlic, chopped dill, and black pepper. Taste and adjust seasoning as desired.
  4. Add the drained cucumbers to the dressing bowl. Gently fold to coat evenly without breaking slices.
  5. Cover and refrigerate for at least 30 minutes before serving to let flavors meld.

Notes

Salting and draining cucumbers is key to prevent watery salad. Use fresh dill for best flavor. Dressing can be adjusted for sweetness or tanginess. Salad can be made up to 8 hours ahead; stir before serving. Store leftovers in airtight container up to 2 days. Serve chilled.
