  • 2 cups (480 ml) vegetable broth (low-sodium recommended)
  • 1 small white onion, finely chopped
  • 2 garlic cloves, minced
  • 3 tablespoons (45 ml) fresh lime juice
  • Zest from 1 lime
  • ½ cup (120 ml) sour cream (or Greek yogurt for lighter option)
  • A handful of chopped cilantro (optional)
  • 1 small jalapeño, seeded and finely chopped (optional)
  • Salt and black pepper to taste
  • 1 tablespoon (15 ml) olive oil
  • Water or ice cubes as needed to adjust consistency
  • For the lime crema:
  • ½ cup (120 ml) sour cream
  • 2 tablespoons (30 ml) fresh lime juice
  • 1 teaspoon lime zest
  • A pinch of salt

Instructions

  1. Peel and pit the avocados, finely chop the white onion and garlic, and if using, seed and finely chop the jalapeño. Zest and juice the limes separately.
  2. In a blender, combine avocados, vegetable broth, chopped onion, garlic, jalapeño (if using), lime juice, olive oil, and a pinch of salt and pepper. Blend on high until completely smooth, about 2-3 minutes.
  3. Adjust the soup consistency by adding water or a few ice cubes if too thick, then pulse again until desired texture is reached.
  4. Transfer the soup to a sealed container and refrigerate for at least 1 hour, preferably overnight, to chill and let flavors meld.
  5. Prepare the zesty lime crema by whisking together sour cream, lime juice, lime zest, and a pinch of salt until smooth and creamy. Adjust lime or salt to taste.
  6. Serve the chilled avocado soup in bowls, drizzled generously with the lime crema. Garnish with fresh cilantro leaves or extra lime zest if desired.

Notes

Use ripe avocados that yield slightly to gentle pressure but are not mushy. Adjust lime juice gradually to balance acidity. Chill soup thoroughly before serving. For dairy-free, substitute sour cream with coconut yogurt or cashew cream. Jalapeño is optional for heat. Blend in batches if blender is small. Adding a splash of olive oil before serving enhances richness.
