  • 2 cups fresh strawberries, hulled and sliced
  • 8 ounces fresh mozzarella, sliced
  • 1 cup fresh basil leaves
  • 1/2 cup balsamic vinegar
  • 1 to 2 tablespoons honey
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt, to taste
  • Freshly ground black pepper, a few cracks (optional)

Instructions

  1. Prepare the balsamic glaze: Pour 1/2 cup balsamic vinegar into a small saucepan over medium heat. Add 1 tablespoon honey. Stir to combine and bring to a gentle boil.
  2. Reduce heat to low and simmer until the liquid reduces by half and thickens to a syrupy consistency, about 10 minutes. Swirl the pan occasionally to prevent burning.
  3. While the glaze reduces, hull and slice the strawberries into 1/4 inch thick slices. Slice the mozzarella to match the strawberry thickness.
  4. Wash and dry basil leaves. Tear larger leaves if desired for texture.
  5. On a large platter, alternate slices of strawberry and mozzarella in a single layer or gentle spiral. Tuck basil leaves between the slices evenly.
  6. Once the balsamic glaze has cooled slightly (warm, not hot), drizzle it generously over the salad.
  7. Drizzle 2 tablespoons extra virgin olive oil over the salad.
  8. Sprinkle a pinch of sea salt and freshly cracked black pepper over the top.
  9. Let the salad sit for 5 minutes before serving to allow flavors to meld and glaze to settle.

Notes

Simmer the balsamic glaze gently over low heat to avoid burning. If glaze thickens too much after cooling, whisk in a teaspoon of warm water to loosen. Use ripe, firm strawberries for best texture. Fresh mozzarella with high moisture content is preferred for creaminess. Let the salad rest 5 minutes before serving to meld flavors. Store leftovers in an airtight container in the refrigerator up to 24 hours; bring to room temperature before serving again.
