Fluffy Pumpkin Protein Muffins with Greek Yogurt

  • 1 cup (240 ml) pumpkin puree (canned, not pumpkin pie filling)
  • ½ cup (120 ml) plain Greek yogurt (full-fat or low-fat)
  • 1 cup (30 g) vanilla protein powder (whey-based recommended)
  • 1 cup (120 g) all-purpose flour (can substitute almond flour or gluten-free blend)
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 2 large eggs (room temperature)
  • ⅓ cup (80 ml) maple syrup (or honey)
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts, dark chocolate chips, or dried cranberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners or grease it lightly.
  2. In a large bowl, whisk together flour, protein powder, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, beat eggs until slightly frothy. Add pumpkin puree, Greek yogurt, maple syrup, and vanilla extract; whisk until smooth.
  4. Pour wet ingredients into dry ingredients and gently fold with a spatula until just combined. Fold in optional mix-ins if using.
  5. Divide batter evenly among muffin cups, filling each about ¾ full.
  6. Bake on middle rack for 18–22 minutes, checking doneness with a toothpick.
  7. Let muffins rest in the tin for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Do not overmix the batter to keep muffins light and tender. Use room temperature eggs and yogurt for better mixing. Check freshness of baking powder and baking soda for proper rise. Vanilla whey protein powder is recommended for best texture and flavor. Muffins can be stored at room temperature for 3 days, refrigerated for 7 days, or frozen for up to 3 months.
