Flavorful Smoked Brisket Sliders Recipe with Easy Pickled Jalapeño Slaw

  • 34 pounds brisket flat or point cut, well-marbled
  • 1 tbsp smoked paprika
  • 2 tbsp brown sugar
  • 2 tsp coarse kosher salt
  • 1 tsp freshly ground black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp yellow mustard
  • Hickory or oak wood chips for smoking
  • 23 jalapeños, thinly sliced
  • 3 cups green cabbage, shredded
  • 1 medium carrot, shredded
  • 1 cup apple cider vinegar
  • 1 cup water
  • 2 tbsp granulated sugar
  • 1 tbsp salt
  • 1 tbsp fresh lime juice
  • 1 tsp honey (optional)
  • A handful fresh cilantro leaves, chopped
  • 12 small slider buns, lightly toasted
  • Butter for toasting buns
  • Optional: pickles or extra sliced jalapeños for topping

Instructions

  1. In a small bowl, mix smoked paprika, brown sugar, kosher salt, black pepper, garlic powder, and onion powder.
  2. Rub yellow mustard all over the brisket, then coat evenly with the dry rub. Wrap tightly and refrigerate for at least 4 hours or overnight.
  3. Preheat smoker to 225°F (107°C). Soak wood chips in water for 30 minutes.
  4. Place brisket fat side up on smoker grate, close lid, and maintain temperature.
  5. Smoke brisket for 6-7 hours until internal temperature reaches about 165°F (74°C). Wrap brisket in butcher paper or foil to push through the stall.
  6. Return wrapped brisket to smoker and continue cooking until internal temperature reaches 200°F (93°C) and meat is tender, about 3-4 more hours.
  7. Let brisket rest wrapped for at least 30 minutes to redistribute juices.
  8. While brisket smokes, combine apple cider vinegar, water, sugar, and salt in a saucepan over medium heat. Stir until dissolved, then remove from heat and add lime juice and honey.
  9. In a large bowl, toss shredded cabbage, carrot, and sliced jalapeños. Pour warm pickling liquid over veggies and toss to coat. Cover and refrigerate at least 1 hour.
  10. Just before serving, spread butter on buns and toast in a hot skillet until golden and crisp.
  11. Slice brisket thinly against the grain. Assemble sliders by piling brisket on buns, topping with pickled jalapeño slaw, and adding optional pickles or extra jalapeños.
  12. Serve immediately.
