  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 1/2 cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and freshly ground black pepper, to taste
  • 1 loaf crusty bread (sourdough or baguette)

Instructions

  1. Pat the shrimp dry with paper towels and season lightly with salt and pepper.
  2. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat until butter melts and bubbles gently.
  3. Add minced garlic and sauté for 30 seconds to 1 minute until fragrant and slightly golden, stirring constantly.
  4. Add shrimp in a single layer and cook for about 2 minutes without moving to create a sear.
  5. Flip the shrimp and immediately pour in 1/2 cup dry white wine; let it bubble and reduce to form the sauce.
  6. Cook shrimp for another 2-3 minutes until pink and opaque.
  7. Stir in 1 tablespoon fresh lemon juice and sprinkle red pepper flakes if desired.
  8. Add chopped parsley and gently stir to combine.
  9. Transfer shrimp and sauce to a serving dish and serve immediately with crusty bread for soaking up the sauce.

Notes

Pat shrimp dry before cooking to ensure a good sear. Avoid overcrowding the pan to prevent steaming. Use fresh garlic and a dry white wine you enjoy drinking. Do not overcook shrimp to avoid rubbery texture. The sauce should reduce but not evaporate completely. For dairy-free, replace butter with coconut oil or extra olive oil. Serve immediately with crusty bread to soak up the sauce. Leftovers keep up to 2 days refrigerated; reheat gently.
