  • 1 teaspoon smoked paprika
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Instructions

  1. Rinse and pat dry 2 pounds (900g) of chicken wings, then separate wingettes and drumettes at the joint if not already done.
  2. In a medium bowl, whisk together 1/4 cup honey, 1 tablespoon toasted chipotle powder, 3 cloves minced garlic, 2 tablespoons fresh lime juice, 1 teaspoon smoked paprika, 1 teaspoon kosher salt, 1/2 teaspoon black pepper, and 2 tablespoons olive oil.
  3. Toss the wings in the marinade until fully coated. Cover and refrigerate for at least 30 minutes, ideally up to 2 hours.
  4. Preheat the grill to medium-high heat (around 375°F / 190°C). If using charcoal, let coals burn down to glowing embers.
  5. Place wings on the grill grates, spacing them out evenly. Grill for about 20-25 minutes total, flipping every 5 minutes and basting with reserved marinade or extra honey during the last 10 minutes.
  6. Check that wings reach an internal temperature of 165°F (74°C) and have a nicely caramelized, sticky skin.
  7. Remove wings from the grill and let rest on a wire rack or platter for 5 minutes before serving.

Toast chipotle powder and smoked paprika lightly in a dry skillet before mixing to enhance smoky flavor. Pat wings dry before marinating for better glaze adhesion and crispiness.
