  • 1 teaspoon chipotle chili powder (adjust to taste)

  • 1/2 teaspoon ground cumin
  • 2 tablespoons fresh lime juice
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 red onion, cut into wedges
  • 1 zucchini, sliced into thick rounds
  • Cherry tomatoes (optional)
  • 1 tablespoon olive oil (for veggies)
  • Salt and pepper, to taste (for veggies)
  • Wooden or metal skewers (if wooden, soak in water 30 minutes before grilling)

Instructions

  1. Cut 1.5 pounds of boneless, skinless chicken breasts into uniform 1-inch cubes and place in a large bowl.
  2. In a small bowl, whisk together 2 tablespoons honey, 1 teaspoon chipotle chili powder, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon ground cumin, 2 tablespoons fresh lime juice, 2 tablespoons olive oil, and salt and pepper to taste until smooth and glossy.
  3. Pour the marinade over the chicken cubes and toss gently to coat evenly. Cover and refrigerate for at least 20 minutes, ideally up to 2 hours.
  4. While the chicken marinates, chop the red bell pepper, red onion, and zucchini into 1-inch pieces or thick rounds. Toss with 1 tablespoon olive oil, salt, and pepper. Set aside.
  5. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  6. Thread the chicken cubes and veggies alternately onto the skewers, leaving small spaces between pieces for heat circulation.
  7. Preheat the grill to medium-high heat (about 400°F). Brush the grates with oil to prevent sticking.
  8. Place the skewers on the grill and cook for 10-12 minutes, turning every 3-4 minutes until the chicken is caramelized and reaches an internal temperature of 165°F.
  9. Remove skewers from the grill and let rest for 5 minutes before serving to allow juices to redistribute.

Notes

Use medium-high heat to caramelize the glaze without burning. Turn skewers every 3-4 minutes for even cooking. Avoid overcrowding the grill to prevent steaming. Marinate chicken for at least 20 minutes but no longer than 2 hours to avoid texture changes from lime juice. Wooden skewers should be soaked before grilling to prevent burning. If using chicken thighs, reduce cooking time slightly. Grill pan or broiler can be used if no grill is available.
