A fresh and light summer salad featuring smoky grilled peaches, creamy burrata, and a sticky-sweet honey balsamic drizzle that balances smoky, creamy, tangy, and sweet flavors.

  • 34 ripe but firm peaches, halved and pitted
  • 8 ounces (about 225g) fresh burrata cheese
  • 4 cups (about 120g) mixed greens (arugula or baby spinach)
  • A handful of fresh basil leaves, torn
  • 2 tablespoons honey (preferably raw or wildflower)
  • 3 tablespoons balsamic vinegar (aged, thick and syrupy)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste (sea salt flakes recommended)
  • Optional: toasted pine nuts or sliced almonds

Instructions

  1. Wash and dry the peaches, then halve and pit them. Brush the cut sides lightly with olive oil.
  2. Preheat grill or grill pan to medium-high heat (around 375°F / 190°C).
  3. Place peaches cut side down on the grill and grill for 3-4 minutes per side until char marks appear and peaches soften slightly but hold shape. Remove and let cool slightly.
  4. In a small saucepan over medium heat, combine honey and balsamic vinegar. Simmer and reduce for 5-7 minutes until thick and syrupy. Remove from heat and let cool.
  5. In a large bowl, combine mixed greens and torn basil leaves. Drizzle with olive oil and season with salt and pepper. Toss gently.
  6. On a serving platter or plates, arrange the dressed greens. Slice grilled peaches into wedges and scatter over greens.
  7. Tear burrata into chunks and place on top of salad.
  8. Drizzle honey balsamic glaze evenly over the salad.
  9. Sprinkle with toasted pine nuts or sliced almonds if using, and finish with sea salt flakes and freshly cracked black pepper.
  10. Serve immediately while burrata is cool and peaches are slightly warm.

Notes

Watch peaches carefully while grilling to avoid mushiness. Reduce balsamic and honey slowly to achieve syrupy consistency. Burrata should be served at room temperature for best creaminess. Toast pine nuts while grilling peaches for extra crunch. The honey balsamic drizzle can be made ahead and refrigerated; warm gently before use.
