  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 lime, juiced and zested
  • 1 small clove garlic, minced (optional)
  • ½ teaspoon salt (sea salt preferred)
  • Freshly ground black pepper, to taste
  • ¼ teaspoon smoked paprika (optional)

Instructions

  1. Prep the Corn: Peel back the husks without completely removing them, then remove the silk strands. Pull the husks back over the corn or remove them entirely if you prefer more char. Soak the corn in cold water for 10 minutes if grilling with husks on to prevent burning.
  2. Make the Cilantro Lime Butter: In a small bowl, combine 4 tablespoons of softened unsalted butter with chopped cilantro, lime zest, lime juice, minced garlic, salt, black pepper, and smoked paprika if using. Mix until well blended and creamy. Keep it at room temperature for easy spreading.
  3. Preheat the Grill: Heat your grill to medium-high, around 375°F (190°C). If using charcoal, wait until coals are covered with white ash.
  4. Grill the Corn: Place the corn on the grill. If husked, grill directly, turning every 2-3 minutes for about 10-12 minutes total until kernels are tender and slightly charred. For husked corn, grill with husks on for about 15 minutes, turning occasionally.
  5. Apply the Butter: Remove corn from heat and immediately spread the cilantro lime butter generously over each ear, letting it melt into every crevice.
  6. Serve: Serve warm with extra lime wedges on the side for squeezing.

Soak corn with husks on before grilling to prevent burning. Use softened butter, not melted, for best flavor and spreadability. Turn corn every 2-3 minutes for even cooking and perfect grill marks. Apply butter immediately after grilling while corn is hot. For over-charred corn, brush with butter mixed with honey to soften bitterness.
