A quick and easy homemade trail mix featuring candied pecans with cinnamon and vanilla, dried cranberries, and dark chocolate chips for a perfect balance of sweet, tart, and rich flavors.

Ingredients

Scale
  • 2 cups (200g) pecan halves (raw or toasted)
  • 1/3 cup (65g) granulated sugar
  • 2 tablespoons (28g) unsalted butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup (120g) dried cranberries
  • 1 cup (175g) dark chocolate chips (60-70% cocoa)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium saucepan, melt 2 tablespoons (28g) unsalted butter over medium heat.
  3. Stir in 1/3 cup (65g) granulated sugar, 1 teaspoon cinnamon, 1 teaspoon vanilla extract, and a pinch of salt. Stir constantly until the sugar dissolves and the mixture starts bubbling gently, about 3-4 minutes.
  4. Add 2 cups (200g) pecan halves to the saucepan and toss to coat evenly with the buttery sugar mixture.
  5. Transfer the coated pecans to the prepared baking sheet and spread them out in a single layer.
  6. Bake in the preheated oven for 10-12 minutes, stirring halfway through to prevent sticking and ensure even caramelization.
  7. Remove from oven and let the pecans cool completely on the baking sheet to harden the candy shell.
  8. In a large mixing bowl, combine the cooled candied pecans, 1 cup (120g) dried cranberries, and 1 cup (175g) dark chocolate chips. Toss gently to mix.
  9. Transfer the trail mix to an airtight container. Store at room temperature for up to two weeks or refrigerate for longer freshness.

Notes

Watch pecans closely during baking to avoid burning. Stir constantly when melting sugar to prevent crystallization. Chill candied pecans before mixing with chocolate chips if kitchen is warm to prevent melting. For dairy-free, substitute butter with coconut oil. Variations include swapping nuts, dried fruits, or chocolate types. Store in airtight container at room temperature or refrigerate for longer freshness.
