  • 1/3 cup buffalo wing sauce (e.g., Frank’s RedHot)
  • 1 head iceberg or butter lettuce, leaves separated and washed
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 small yellow or white onion, finely chopped (optional)
  • 1/4 cup blue cheese or ranch dressing (optional)
  • 1 stalk celery, finely diced
  • Salt and pepper to taste
  • Optional garnishes: chopped green onions, fresh parsley, lime squeeze

Instructions

  1. Separate lettuce leaves carefully to keep them whole and crisp. Rinse and dry well.
  2. Dice onion and celery finely, mince garlic cloves.
  3. Heat olive oil in a skillet over medium heat. Add garlic and onion, sauté for 2-3 minutes until fragrant and translucent.
  4. Add shredded chicken to the pan and warm through for 3-4 minutes, stirring regularly.
  5. Pour in buffalo sauce and stir to coat chicken evenly. Cook 2-3 minutes until sauce thickens slightly.
  6. Stir in diced celery and season with salt and pepper to taste. Remove from heat.
  7. Spoon buffalo chicken mixture onto each lettuce leaf. Drizzle with blue cheese or ranch dressing if using, and sprinkle garnishes.
  8. Serve immediately for crisp lettuce bite.

Notes

Dry lettuce leaves thoroughly to avoid sogginess. Adjust spice level by mixing buffalo sauce with melted butter or Greek yogurt. Assemble wraps just before serving to keep lettuce crisp. Leftover chicken filling can be stored up to 3 days refrigerated.
