This sticky, fiery habanero honey hot sauce is the perfect balance of sweet and heat, ideal for wings and so much more. Made with simple ingredients, it’s a crowd-pleaser that turns any meal into a mini-event.

  • 68 fresh habanero peppers, stems removed
  • 1 cup honey (preferably local wildflower honey)
  • 1/4 cup apple cider vinegar
  • 4 cloves garlic, smashed
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt (or to taste)
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Prep the Peppers: Put on gloves. Remove stems from habaneros. For less heat, slice open and scrape out seeds and membranes. Leave half the seeds in for a nice balance.
  2. Simmer the Base: In a small saucepan, combine habaneros, smashed garlic, apple cider vinegar, and 1/4 cup water. Bring to a gentle simmer over medium heat, then reduce to low. Cook for 10-12 minutes until peppers are soft and garlic is tender.
  3. Blend the Mixture: Carefully transfer the saucepan contents to a blender. Add honey, lime juice, and salt. Blend on high for 30-60 seconds until smooth. Add water a tablespoon at a time if too thick.
  4. Strain (Optional): For a smoother sauce, pour through a fine-mesh strainer into a bowl, pressing on solids with a spatula.
  5. Finish with Butter: Return blended sauce to the saucepan over low heat. Whisk in butter until fully melted and incorporated. Taste and adjust salt or lime juice as needed.
  6. Prepare the Wings: Preheat oven to 425°F (220°C). Pat chicken wings dry, toss with oil, salt, and pepper. Arrange in a single layer on a parchment-lined baking sheet. Bake for 40-45 minutes, flipping halfway, until golden and crispy.
  7. Toss and Serve: In a large mixing bowl, combine baked wings with about 1/2 cup of the sauce. Toss until evenly coated. Serve immediately with extra sauce on the side.

Notes

Handle habaneros with gloves. Don’t overcook the honey—let pepper mixture cool slightly before blending. The sauce gets better after a day in the fridge. Double the batch for later use. To rescue an overly spicy batch, add more honey or a splash of cream.
