Instructions

  1. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar until evenly combined.
  2. In a separate bowl, whisk sourdough discard, milk, egg, melted butter, and vanilla extract until smooth.
  3. Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined; batter should be thick but pourable with some lumps.
  4. Let the batter rest at room temperature for 5-10 minutes to activate the leavening agents.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
