  • 1 tbsp olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup beef broth
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup Monterey Jack cheese, freshly shredded
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 cup cherry tomatoes, diced
  • 1/2 cup fresh cilantro, chopped
  • 1 jalapeño, thinly sliced
  • 1/2 cup sour cream
  • 1/4 cup pickled jalapeños (optional)
  • 1 avocado, diced or mashed into guacamole
  • Lime wedges for squeezing

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook the ground beef: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened. Add ground beef, breaking it apart, and cook for 5-6 minutes until fully browned. Drain excess fat if needed. Stir in garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for 1 minute until fragrant. Pour in beef broth, scraping up browned bits, and simmer for 2 minutes until slightly thickened. Remove from heat.
  3. Prep your toppings: Dice tomatoes, chop cilantro, slice jalapeño, and shred cheese while beef cooks.
  4. Layer the chips: Line a baking sheet with foil or parchment. Spread half the tortilla chips in an even layer.
  5. First layer of toppings: Sprinkle half the seasoned beef over chips. Add half the black beans and half the diced green chiles. Top with half the shredded cheddar and Monterey Jack.
  6. Second layer: Add remaining chips on top. Repeat with remaining beef, beans, green chiles, and cheese.
  7. Bake: Place baking sheet in preheated oven and bake for 8-10 minutes until cheese is fully melted and bubbly.
  8. Add fresh toppings: Remove from oven. Immediately sprinkle with diced tomatoes, cilantro, and fresh jalapeño slices. Dollop sour cream on top. Add pickled jalapeños if using. Finish with diced avocado or guacamole and a generous squeeze of lime juice.
  9. Serve immediately: Bring the whole sheet pan to the table and let everyone dig in.

Shred your own cheese for the best melt. Layer chips and toppings in two layers to ensure every chip is covered. Serve immediately on the sheet pan to keep chips crispy. Cook beef and shred cheese a day ahead to save time.
