These easy turkey and cheese lunchbox roll-ups are a quick, no-fuss solution to the soggy sandwich problem. Made with a creamy ranch-dill cream cheese spread, deli turkey, and your favorite cheese, they come together in under 10 minutes and hold up beautifully in lunchboxes.

  • 4 (8-inch) flour tortillas
  • 8 oz cream cheese, softened
  • 1 tablespoon ranch seasoning mix
  • 1/2 teaspoon dried dill
  • 810 slices deli turkey
  • 46 slices provolone or Swiss cheese
  • Fresh spinach or lettuce (optional)

Instructions

  1. In a small bowl, combine softened cream cheese, ranch seasoning mix, and dried dill. Mix until smooth.
  2. Lay one flour tortilla flat on a cutting board. If stiff, microwave for 10-15 seconds to soften.
  3. Spread a thin, even layer of the cream cheese mixture over the entire tortilla, leaving a 1/2-inch border.
  4. Place 2-3 slices of turkey flat on the cream cheese, slightly overlapping. Top with 1-2 slices of cheese. Add spinach if using.
  5. Starting at one edge, roll the tortilla tightly, keeping the filling in place. Gently squeeze to seal.
  6. Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes (or 15 minutes in the freezer).
  7. Unwrap and slice into 1-inch thick pinwheels using a sharp serrated knife. Wipe the knife clean between cuts for best results.
  8. Serve immediately or pack in a lunchbox.

Notes

Chilling is essential for clean slices. Pat any greens completely dry to prevent sogginess. Use room temperature cream cheese for easy spreading. For gluten-free, use large gluten-free tortillas. Store in an airtight container in the refrigerator for up to 3 days.
