A light and refreshing spritzer perfect for spring brunch, combining dry rosé, fresh strawberries, simple syrup, lemon juice, and sparkling water for a bubbly, fruity drink.

  • 750 ml (25 fl oz) dry rosé wine
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons simple syrup
  • 1 tablespoon fresh lemon juice
  • 1 cup (240 ml) sparkling water, chilled
  • Ice cubes
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Slice 1 cup of fresh, firm strawberries and place them in a large pitcher or mixing glass.
  2. Using a muddler or the back of a spoon, gently press the strawberries just enough to release their juice but keep some texture (about 1-2 minutes). Avoid over-mashing.
  3. Add 2 tablespoons of simple syrup and 1 tablespoon of fresh lemon juice. Stir gently to combine and adjust sweetness or acidity to taste (about 1 minute).
  4. Slowly pour the entire 750 ml bottle of chilled rosé into the pitcher. Stir lightly to blend flavors without losing bubbles (about 30 seconds).
  5. Fill the pitcher with 1-2 cups of ice cubes and top off with 1 cup (240 ml) of chilled sparkling water. Stir gently once more to combine.
  6. Pour the spritzer into tall glasses, including some strawberry bits. Garnish with a sprig of fresh mint if desired and serve immediately.

Notes

Do not over-muddle the strawberries to keep texture and visual appeal. Use chilled rosé, sparkling water, and glasses to preserve bubbles. Adjust sweetness and acidity based on strawberry ripeness. Add sparkling water last and stir gently to maintain fizz. Can prep muddled strawberries with syrup and lemon juice in advance and refrigerate up to a day; add rosé, sparkling water, and ice just before serving.
