  • 2 tablespoons honey or maple syrup
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips or raisins (40g, optional)
  • 1/2 teaspoon ground cinnamon

Instructions

  1. Mash 2 medium ripe bananas in a mixing bowl with a fork or potato masher until mostly smooth with a few small lumps remain (about 2-3 minutes).
  2. Stir in 1/2 cup peanut butter and 2 tablespoons honey or maple syrup until the mixture looks glossy and well combined (1-2 minutes).
  3. Add 1 1/2 cups rolled oats, 1 tablespoon chia seeds (if using), 1/2 teaspoon ground cinnamon, and 1 teaspoon vanilla extract. Fold gently until evenly distributed and mixture is thick but sticky.
  4. Stir in 1/4 cup mini chocolate chips or raisins if desired.
  5. Scoop about 1 tablespoon (15 ml) of mixture and roll into balls. Place on a baking sheet or plate lined with parchment paper. Yield about 15-18 bites.
  6. Chill in the refrigerator for at least 30 minutes to set. Alternatively, freeze for 15 minutes if in a rush.
  7. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.

Notes

Use ripe bananas for natural sweetness and moisture. If mixture is too wet, add more oats; if too dry, add a splash of peanut butter or water. Keep hands slightly wet when rolling to prevent sticking. Rolled oats provide best texture; avoid quick oats. Chill bites to prevent crumbling.
