These Easy Patriotic Pinwheel Sandwiches combine the crisp sweetness of red bell pepper with tangy, creamy blue cheese wrapped in soft tortillas, making a colorful and addictive party snack perfect for summer gatherings.

Ingredients

Scale
  • 4 large flour tortillas (10-inch size; can substitute with gluten-free tortillas)
  • 1 medium red bell pepper, finely diced (about 3/4 cup or 120g)
  • 3 ounces crumbled blue cheese (such as Maytag or Roquefort)
  • 4 ounces softened cream cheese
  • 2 tablespoons sour cream or Greek yogurt
  • 2 tablespoons finely chopped fresh chives
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: a few dashes of hot sauce or substitute red bell pepper with roasted red peppers

Instructions

  1. In a medium mixing bowl, combine 4 ounces softened cream cheese, 2 tablespoons sour cream or Greek yogurt, and 1 tablespoon fresh lemon juice. Mix until smooth and creamy, about 3 minutes.
  2. Gently fold in 3 ounces crumbled blue cheese and 2 tablespoons finely chopped fresh chives. Season with salt and freshly ground black pepper to taste, being careful not to overmix.
  3. Finely dice one medium red bell pepper (about 3/4 cup). Add the diced pepper to the cheese mixture and fold gently until combined.
  4. Lay one 10-inch tortilla flat on a clean surface. Spread about 1/3 cup of the cheese and pepper filling evenly over the tortilla, leaving about half an inch from the edges bare.
  5. Starting from one edge, roll the tortilla tightly but gently, keeping the filling snug inside. Wrap the rolled tortilla tightly in plastic wrap and refrigerate for at least 30 minutes to set the filling.
  6. After chilling, unwrap the roll and slice into 1-inch pinwheels with a sharp serrated knife. Arrange on a platter with the spiral side up and serve immediately or chill until ready to serve.

Notes

Chilling the rolled tortillas is essential to firm up the filling and make slicing easier. Use a serrated knife and a gentle sawing motion to avoid squashing the roll. Prepare the filling and tortillas separately if making ahead to prevent sogginess. Substitute cheeses or peppers to suit taste or dietary needs. Serve chilled or at room temperature for best flavor.
