  • 8 large eggs, room temperature
  • 2 cups whole milk or half-and-half
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar or brown sugar
  • Pinch of salt
  • 1 1/2 cups fresh berries (blueberries, sliced strawberries, raspberries)
  • Optional toppings: powdered sugar for dusting, maple syrup for serving

Instructions

  1. Cut day-old bread into roughly 1-inch cubes and spread evenly in a greased 9×13 inch baking dish.
  2. In a large bowl, whisk together eggs, milk or half-and-half, vanilla extract, cinnamon, sugar, and salt until smooth and frothy.
  3. Pour custard evenly over bread cubes, gently pressing down to help bread absorb the liquid. Cover tightly with plastic wrap and refrigerate for at least 4 hours or overnight.
  4. Remove casserole from fridge about 30 minutes before baking. Scatter fresh berries evenly over the top just before baking.
  5. Preheat oven to 350°F (175°C). Bake uncovered on middle rack for 45 to 55 minutes until top is golden brown and custard is set (knife inserted should come out clean). Tent with foil if top browns too fast.
  6. Let casserole rest for 5 to 10 minutes before serving. Dust with powdered sugar and serve with maple syrup on the side.

Notes

Use day-old bread for best soaking without sogginess. Refrigerate casserole for at least 4 hours or overnight to allow custard to soak fully. Add berries just before baking to keep them fresh and prevent bleeding. Tent with foil if top browns too quickly. Let rest before serving for easier slicing. Can substitute gluten-free bread and dairy-free milk for dietary needs. Vegan adaptation possible with flaxseed egg and plant milk.
