  • 1/4 cup plain Greek yogurt
  • 1 medium ripe banana
  • 2 tablespoons creamy peanut butter

  • 1 tablespoon chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • For topping (optional): sliced banana, drizzle of peanut butter, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the ripe banana in a small bowl or directly in your jar until mostly smooth.
  2. Add the milk, Greek yogurt, peanut butter, maple syrup (if using), and vanilla extract. Whisk until well combined.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until all oats are fully coated.
  4. Transfer mixture to a Mason jar or airtight container. Screw on lid and shake to distribute evenly.
  5. Refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, peanut butter drizzle, chopped peanuts, and cinnamon. Serve cold or microwave for 30 seconds if desired.

Notes

Use old-fashioned rolled oats for best texture; instant oats become mushy. Mash banana thoroughly to avoid chunks. Let rest at least 6 hours for optimal texture. Oats keep up to 4 days in the fridge; add toppings just before serving. For warm oats, transfer to a microwave-safe bowl before heating.
