Ingredients

Scale
  • 2 cups (250g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ¾ cup (150g) granulated sugar
  • ⅓ cup (80ml) vegetable oil (canola oil recommended)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • Zest of 1 large lemon
  • 2 tbsp fresh lemon juice
  • 1 ½ cups (about 1 medium) grated zucchini, drained
  • 1 cup (150g) fresh blueberries (frozen can be used, do not thaw)
  • Optional: ½ cup (60g) chopped walnuts or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment paper.
  2. Grate zucchini using medium holes of a grater. Drain excess moisture by squeezing in a clean towel until damp but not dripping.
  3. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  4. Stir in granulated sugar to the dry ingredients.
  5. Add vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice to the dry mixture. Stir gently with a wooden spoon or spatula until just combined; do not overmix.
  6. Fold in the drained grated zucchini and blueberries. If using nuts, fold them in now as well.
  7. Transfer batter to prepared loaf pan and smooth the top evenly.
  8. Bake for 50-60 minutes, starting to check at 50 minutes with a toothpick. It should come out clean or with a few moist crumbs.
  9. Cool bread in the pan for 10-15 minutes, then transfer to a wire rack to cool completely.

Notes

Drain grated zucchini well to avoid soggy bread. Do not overmix batter to keep bread tender. Use fresh lemon zest and juice for best flavor. Tent with foil if top browns too quickly. Bread tastes better after resting a day. Frozen blueberries can be used without thawing to prevent color bleeding.
