  • ⅓ cup (75g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon (optional)
  • ¾ cup (130g) semi-sweet chocolate chips
  • 1 tablespoon all-purpose flour (for coating chocolate chips)

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Line your 9×5-inch loaf pan with parchment paper, leaving an overhang on the two long sides. Lightly grease the exposed ends with butter or non-stick spray.
  2. Mash the bananas: Place the three ripe bananas in your large mixing bowl. Mash them with a fork or potato masher until they’re mostly smooth with a few small lumps remaining.
  3. Add the melted butter: Pour the slightly cooled melted butter over the mashed bananas. Stir until combined.
  4. Mix in the sugar, egg, and vanilla: Add the granulated sugar and stir until well incorporated. Crack the egg directly into the bowl and add the vanilla extract. Whisk everything together until the mixture is smooth and glossy, about 1 minute.
  5. Combine the dry ingredients: Sprinkle the flour, baking soda, salt, and cinnamon (if using) over the wet mixture. Stir gently with a wooden spoon or rubber spatula until just combined. Stop mixing as soon as you no longer see streaks of flour.
  6. Prepare the chocolate chips: In a small bowl, toss the chocolate chips with the 1 tablespoon of flour. Gently fold the coated chips into the batter with just a few strokes.
  7. Transfer to the pan: Scrape the batter into your prepared loaf pan. Use the rubber spatula to spread it evenly. Let the batter sit in the pan for about 5 minutes before baking.
  8. Bake: Place the pan in the preheated oven and bake for 55 to 65 minutes. Start checking at 50 minutes by inserting a toothpick into the center. If it comes out clean or with just a few moist crumbs, it’s done.
  9. Cool properly: Let the bread cool in the pan on a wire rack for 15 minutes. Then use the parchment overhang to lift it out and transfer it directly to the cooling rack. Let it cool completely before slicing—about 1 hour.

Don’t overmix the batter. Use really ripe bananas. Room temperature ingredients matter. Check for doneness properly. Let it cool completely. Toast leftover slices.
