  • 3/4 cup (90g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 cups (about 320g) fresh strawberries, hulled and sliced
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. Prepare the Crust: Crush pretzels finely using a food processor or plastic bag and rolling pin. In a bowl, combine crushed pretzels, 1/4 cup granulated sugar, and melted butter. Mix until well combined and crumbly. Press mixture evenly into bottom and up sides of a 9-inch pie dish. Optionally bake at 350°F (175°C) for 8 minutes or chill in fridge for 15 minutes to set.
  2. Make the Creamy Filling: Beat softened cream cheese with a mixer until smooth and fluffy (2-3 minutes). Add vanilla extract. In a separate chilled bowl, whip heavy cream until stiff peaks form. Gently fold powdered sugar into cream cheese, then fold in whipped cream until combined and airy.
  3. Assemble the Pie: Spoon creamy filling over pretzel crust and smooth the top. Cover loosely with plastic wrap and refrigerate for at least 2 hours to set.
  4. Prepare the Strawberry Topping: Toss sliced strawberries with 2 tablespoons sugar and lemon juice. Let macerate for 10-15 minutes until juicy.
  5. Finish and Serve: Spoon strawberry topping evenly over chilled filling. Garnish with whole strawberries or powdered sugar if desired. Keep refrigerated until serving.

Notes

If you don’t bake the crust, chill it to prevent sogginess. Use chilled bowls and cream for best whipped cream results. Avoid pulverizing pretzels into dust to maintain crunch. For dairy-free, use vegan cream cheese and coconut whipped cream. Frozen strawberries can be used if thawed and drained. Baking crust is optional but adds crispness.
