  • 1/2 cup natural peanut butter (125g)
  • 1/3 cup honey (113g)
  • 2 tablespoons ground flaxseed
  • 1/3 cup mini chocolate chips (60g)
  • 1 teaspoon vanilla extract
  • Pinch of sea salt

Instructions

  1. In a mixing bowl, stir together rolled oats, ground flaxseed, and sea salt.
  2. Add peanut butter, honey, and vanilla extract to the dry ingredients and mix until sticky but manageable.
  3. Gently fold in mini chocolate chips.
  4. Roll the mixture into 1-inch balls using your hands or a small cookie scoop. If too sticky, refrigerate for 10 minutes before rolling.
  5. Place the energy bites on a parchment-lined baking sheet or plate and refrigerate for at least 30 minutes to firm up.
  6. Store the chilled bites in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

Do not skip chilling the bites to ensure they hold their shape. For a nuttier flavor, lightly toast oats before mixing. Use natural peanut butter without added sugars or oils for best results. Nut-free option: substitute peanut butter with sunflower seed butter. Vegan option: use maple syrup or agave instead of honey and dairy-free chocolate chips.
