Easy Mini Caprese Skewer Lunchbox Bites with Pesto Drizzle

These mini Caprese skewers are fresh, colorful, and easy to make, perfect for healthy snacks or lunchbox treats with a flavorful pesto drizzle.

  • 1 pint (about 300g) cherry tomatoes, halved if large
  • 8 ounces (225g) fresh mini mozzarella balls (bocconcini), drained
  • 1 small bunch fresh basil leaves, washed and patted dry
  • 1/3 cup (80ml) pesto sauce, homemade or store-bought
  • 1 tablespoon olive oil for drizzling
  • Salt and pepper to taste
  • About 20 wooden skewers or toothpicks, soaked in water for 10 minutes

Instructions

  1. Rinse and dry the cherry tomatoes and basil leaves carefully. Halve the tomatoes if they’re large. Drain the mini mozzarella balls well to avoid sogginess. (Approx. 5 minutes)
  2. Starting with a cherry tomato half, thread it onto a skewer or toothpick, followed by a fresh basil leaf (folded if large), then a mozzarella ball, and finish with another basil leaf or tomato half for balance. Repeat until all ingredients are used. (Approx. 7 minutes)
  3. If using store-bought pesto, stir and mix in a tablespoon of olive oil to loosen it for drizzling. If homemade, blend fresh basil, pine nuts, garlic, Parmesan, olive oil, and lemon juice until smooth, then thin with olive oil. (Approx. 5 minutes)
  4. Arrange the skewers on a serving plate or pack them in your lunchbox. Lightly sprinkle with flaky salt and freshly cracked black pepper. Drizzle the pesto evenly over the skewers. (Approx. 3 minutes)
  5. Optional: Let the skewers rest in the fridge for 10-15 minutes before serving to let the pesto meld with the fresh ingredients.

Notes

Soak wooden skewers in water before assembling if grilling to prevent burning. Drizzle pesto just before serving to keep basil fresh. Pat dry mozzarella to avoid sogginess. Fold large basil leaves for easier threading. Store skewers in airtight container up to 24 hours, keep pesto separate if possible.
