Easy Mini Caprese Salad Bites

These mini Caprese salad bites combine crispy toasted baguette slices with juicy cherry tomatoes, creamy fresh mozzarella, and fragrant basil, drizzled with balsamic glaze for a quick and elegant appetizer perfect for parties or snacks.

  • 1 fresh or day-old baguette, sliced into 1/4-inch (about 6 mm) rounds
  • 1 cup (150 g) cherry or grape tomatoes, halved
  • 8 ounces (225 g) fresh mozzarella balls (bocconcini or ciliegine), drained
  • About 20 small fresh basil leaves
  • 2 tablespoons (30 ml) extra virgin olive oil, for drizzling
  • 12 tablespoons (15–30 ml) balsamic glaze or reduction
  • Salt and freshly ground black pepper, to taste
  • Optional: 1 small clove garlic (for rubbing on toasted baguette)
  • Optional: Cracked red pepper flakes for a subtle kick

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Slice the baguette into 1/4-inch (6 mm) slices and lay them out in a single layer on the baking sheet. If desired, rub the top of each slice with a cut garlic clove before baking.
  3. Toast the baguette slices for 8–10 minutes, flipping halfway through, until golden and crispy but not burnt.
  4. While the bread toasts, toss halved cherry tomatoes with 1 tablespoon (15 ml) olive oil, a pinch of salt, and freshly ground black pepper in a mixing bowl. Set aside to marinate briefly.
  5. Drain the mozzarella balls well. If large, cut into halves or quarters to fit the baguette slices.
  6. Remove toasted baguette slices from the oven and let cool slightly.
  7. Assemble the bites by placing a small basil leaf, a mozzarella ball or piece, and a halved tomato on each baguette slice. Layer basil under or over the cheese as preferred.
  8. Drizzle each bite with extra virgin olive oil and balsamic glaze. Add a light sprinkle of salt and pepper, and optional red pepper flakes for heat.
  9. Serve immediately to maintain crispness and freshness.

Notes

Toast the baguette slices until golden and crispy to prevent sogginess. Marinate tomatoes briefly in olive oil to enhance flavor. Drain mozzarella well to avoid watery bites. Assemble just before serving to keep bread crisp. For garlic lovers, rub toasted bread with garlic clove before baking. Variations include using gluten-free bread or vegan cheese alternatives.
