Easy Loaded Football Nachos with Ground Beef and Cheese

These loaded football nachos are a carefully engineered snack with seasoned ground beef, melted cheddar and Monterey Jack cheese, and fresh toppings on sturdy tortilla chips. Perfect for game day, this layered system ensures every chip gets the perfect bite.

  • 1 lb ground beef (80/20)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 (13 oz) bag sturdy tortilla chips (restaurant-style or thick-cut)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 (15 oz) can black beans, drained and rinsed
  • 1/2 cup pickled jalapeños
  • 1/2 cup diced red onion
  • 1/4 cup sliced black olives (optional)
  • 1 medium tomato, diced
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1 avocado, diced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 6-8 minutes. Leave about a tablespoon of fat in the pan.
  3. Reduce heat to medium. Add chili powder, cumin, smoked paprika, garlic powder, onion powder, and a generous pinch of salt and pepper. Stir to coat the meat evenly and cook for another minute until fragrant. If dry, add a tablespoon of water. Set aside.
  4. Spread tortilla chips in a single even layer on a large rimmed baking sheet.
  5. Sprinkle half of the shredded cheddar and Monterey Jack evenly over the chips.
  6. Spoon the seasoned ground beef evenly over the chips, then scatter the drained and rinsed black beans over the top.
  7. Top with the remaining shredded cheese.
  8. Bake for 10-12 minutes until cheese is fully melted and bubbling around the edges. For a golden top, switch to broil for the last 1-2 minutes, watching closely.
  9. Remove from oven. Immediately scatter pickled jalapeños, diced red onion, sliced black olives, and diced tomato over the hot nachos.
  10. Dollop sour cream in small spoonfuls across the top. Sprinkle with fresh cilantro and diced avocado. Serve immediately on the baking sheet.

Notes

Shred your own cheese from a block for best melting. Layer cheese between chips and toppings to ensure every chip gets some goodness. Serve immediately on the baking sheet for best texture. Prep beef and chop vegetables ahead of time for quicker assembly.
