This isn’t just another potato salad that sits blandly on a picnic table. This is the one people hover around, sneaking spoonfuls before dinner’s even announced—a warm-mixed, bacon-loaded, cheddar-packed crowd-pleaser that’s quick, easy, and unbelievably delicious.

  • 3 pounds red potatoes, washed and cut into 1-inch cubes (skins on)
  • 1 pound bacon, cooked until crispy and crumbled (thick-cut preferred)
  • 2 cups sharp cheddar cheese, shredded (shred from a block)
  • 4 green onions, sliced thinly (white and green parts)
  • 1/2 cup fresh parsley, chopped (optional)
  • 1 cup sour cream (full-fat recommended)
  • 1/2 cup mayonnaise (Duke’s or Hellmann’s recommended)
  • 1 tablespoon ranch seasoning mix (store-bought or homemade)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Cook the bacon first. Place bacon strips on a sheet pan lined with parchment paper. Bake at 400°F (200°C) for 15-20 minutes until crispy. Alternatively, cook in a large skillet over medium heat, turning occasionally, for about 8-10 minutes. Transfer to paper towels to drain and cool. Once cool, crumble into bite-sized pieces. Set aside.
  2. Boil the potatoes. Place cubed potatoes in a large pot and cover with cold water by about 1 inch. Add 1 tablespoon of salt to the water. Bring to a boil over high heat, then reduce to medium and simmer for 12-15 minutes until fork-tender but not falling apart.
  3. Drain and slightly cool. Drain potatoes in a colander and let them sit for about 5 minutes until warm but not steaming hot.
  4. Make the ranch dressing. While potatoes are boiling, whisk together sour cream, mayonnaise, ranch seasoning, apple cider vinegar, garlic powder, onion powder, black pepper, and smoked paprika in a small bowl. Taste and adjust seasoning. Set aside in the fridge.
  5. Combine everything while warm. Transfer warm potatoes to a large mixing bowl. Add the crumbled bacon, shredded cheddar cheese, sliced green onions, and chopped parsley. Pour the ranch dressing over the top. Fold everything together gently using a rubber spatula or large spoon until evenly coated.
  6. Let it rest. Cover the bowl with plastic wrap and let it sit at room temperature for about 15 minutes to allow flavors to meld. If serving cold, refrigerate for at least 1 hour.
  7. Final taste and adjust. Before serving, taste and add more salt, pepper, or a splash of vinegar if needed. Sprinkle extra bacon and green onions on top for presentation. Serve and enjoy.

Warm mixing is key—don’t cool potatoes completely before adding dressing. The heat helps the cheese melt and flavors meld. Double the bacon for extra crunch. Reserve some bacon and green onions for garnish. Store leftovers in an airtight container in the refrigerator for up to 4 days. Do not freeze. Serve cold or at room temperature.
