  • 1/4 cup low-sodium soy sauce
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 pound large shrimp, peeled and deveined (2125 count per pound)
  • Wooden or metal skewers
  • Salt and black pepper to taste
  • Fresh lemon wedges for serving
  • Chopped fresh parsley or cilantro for garnish (optional)

Instructions

  1. In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, rice vinegar, sesame oil (if using), and red pepper flakes (if using). Taste and adjust sweetness or saltiness as needed.
  2. Thaw shrimp if frozen, pat very dry with paper towels. Place shrimp in a bowl or zip-top bag and pour half the marinade over them. Toss to coat and let marinate at room temperature for 10-15 minutes. Reserve remaining marinade for basting.
  3. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  4. Preheat grill to medium-high heat (400-450°F). Clean and oil the grates lightly.
  5. Thread shrimp onto skewers, piercing through the thickest part, leaving a little space between each. Fit about 5-6 large shrimp per skewer.
  6. Place skewers on the hot grill. Cook for 2-3 minutes on the first side without moving, until edges turn pink. Flip carefully with tongs and brush with reserved marinade. Cook for another 2-3 minutes on the second side, until shrimp are pink and curl into a loose C shape.
  7. Remove from grill and transfer to a serving platter. Squeeze fresh lemon juice over the top and sprinkle with chopped parsley or cilantro.
  8. Serve immediately with extra lemon wedges.

Don’t over-marinate shrimp—15 minutes max to avoid mushy texture. Pat shrimp dry before marinating for better browning. Reserve half the marinade for basting to ensure food safety. Use two parallel skewers per row to prevent shrimp from spinning. Watch heat to avoid burning honey; medium-high is ideal. For charcoal grills, wait until coals are covered with white ash. For gas grills, keep lid open while cooking.
