  • 4 cups fresh peaches, peeled, pitted, and finely chopped (about 67 medium peaches)
  • 4 cups granulated sugar (regular or organic)
  • 1 package (1.75 oz or 49 grams) no-cook powdered fruit pectin (such as Sure-Jell brand)
  • 2 tablespoons fresh lemon juice
  • Optional: pinch of ground cinnamon or ginger

Instructions

  1. Peel peaches by blanching in boiling water for 30 seconds then plunging into ice water or peel with a knife. Pit and finely chop, then mash to desired texture.
  2. In a large bowl, stir mashed peaches and sugar together thoroughly. Let sit for about 10 minutes to dissolve sugar and release juices.
  3. Sprinkle powdered fruit pectin evenly over peach-sugar mixture. Add fresh lemon juice and stir vigorously for 3 minutes to activate pectin.
  4. Spoon jam into clean glass jars or freezer-safe containers, leaving about ½ inch headspace. Seal tightly with lids.
  5. Store jam in the refrigerator if using within 3 weeks or freeze for longer storage up to 1 year. Jam thickens as it chills.

Notes

Use ripe but firm peaches for best texture. Stir vigorously for full 3 minutes after adding pectin to ensure proper setting. Store jam chilled or frozen. For chunkier jam, mash less; for smoother jam, mash more or pulse in blender. Clean jars with hot water before filling to help jam set better.
