Easy Crispy Sheet Pan Chicken Ranch Pinwheels

A quick and easy sheet pan recipe featuring ranch-seasoned shredded chicken and cheese rolled in tortillas, baked until crispy and golden. Perfect for busy weeknights or casual gatherings.

  • 2 cups cooked and shredded chicken breast (about 300g)
  • 1 tablespoon dry ranch dressing mix
  • 1/4 cup mayonnaise (60ml)
  • 1 cup shredded cheddar cheese (100g)
  • 68 large flour tortillas (68 inch diameter)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 tablespoons olive oil or melted butter
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. If not already cooked, poach chicken breasts in simmering water for 15 minutes or until fully cooked and tender. Let cool slightly, then shred finely.
  3. In a medium bowl, combine shredded chicken, ranch dressing mix, mayonnaise, shredded cheddar, garlic powder, and onion powder. Mix until well combined and creamy. Adjust seasoning if needed.
  4. Lay one large tortilla flat on a clean surface. Spread about 1/3 cup of the chicken ranch mixture evenly over the tortilla, leaving a small border around the edges.
  5. Starting from one edge, tightly roll the tortilla into a log shape. Repeat with remaining tortillas and filling.
  6. Using a sharp knife, cut each roll into 1 to 1.5-inch (2.5 to 4 cm) pinwheels. Place them cut side up on the baking sheet, spaced evenly.
  7. Lightly brush each pinwheel with olive oil or melted butter.
  8. Bake in the preheated oven for 15–18 minutes, or until tortillas are crisp and golden brown and cheese is melted inside.
  9. Sprinkle chopped fresh parsley over the pinwheels for garnish and serve warm.

Notes

If pinwheels brown too quickly, tent loosely with foil halfway through baking. Do not overcrowd the pan to ensure crispiness. For easier rolling, let filling come closer to room temperature before assembling. Use a gentle sawing motion when slicing to keep pinwheels neat. Leftovers reheat best in an oven or toaster oven to maintain crispiness. Can freeze pinwheels on a baking sheet before transferring to a freezer bag.
