  • 8 oz cream cheese, softened
  • 2 large eggs, room temperature

  • 1 tsp vanilla extract
  • 1 box (15.25 oz) yellow cake mix (gluten-free cake mix optional)
  • 1 cup chopped pecans (toasted lightly)
  • 1/2 cup (1 stick) butter, melted
  • Optional: pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a medium bowl, beat the softened cream cheese until smooth using an electric mixer or whisk.
  3. Add pumpkin puree, sweetened condensed milk, eggs, pumpkin pie spice, and vanilla extract to the cream cheese. Mix until fully combined and creamy, about 3-5 minutes.
  4. Pour the pumpkin mixture into the prepared baking dish and spread evenly with a spatula.
  5. Sprinkle the dry yellow cake mix evenly over the pumpkin layer without stirring.
  6. Scatter the chopped pecans evenly over the cake mix. Toast pecans lightly in a dry skillet for 3-4 minutes before adding for extra flavor.
  7. Drizzle the melted butter evenly over the entire top layer.
  8. Bake in the preheated oven for 45-50 minutes until the top is golden brown and crispy and the filling is set but still creamy. A toothpick inserted in the center should come out mostly clean with a little moistness.
  9. Let the cake cool for at least 15 minutes before serving to allow layers to set.

Notes

Do not stir the cake mix into the pumpkin mixture to maintain the signature crunchy topping. Toast pecans lightly for best flavor and crunch. Tent with foil after 30 minutes if pecans brown too quickly. Let cake cool before slicing for easier serving.
