  • ¼ teaspoon vanilla extract (optional)
  • Pinch of salt
  • 1 cup (240 ml) cold brew or strong iced coffee

Instructions

  1. In a small bowl, combine 1 tablespoon pumpkin puree, 2 tablespoons whole milk, and ¼ teaspoon pumpkin pie spice. Whisk vigorously until smooth and no lumps remain, about 20-30 seconds.
  2. Add ¼ cup heavy cream, 1 tablespoon maple syrup, ¼ teaspoon vanilla extract, and a pinch of salt. Stir gently to combine without aerating.
  3. Using a handheld frother, place the whisk tip just below the surface and froth for 30-45 seconds until the mixture doubles in volume and forms soft peaks. Alternatively, use a French press by pumping the plunger vigorously for 30 seconds.
  4. Check consistency: foam should be thick and creamy like soft whipped cream. If too runny, froth another 10-15 seconds; if too stiff, add a teaspoon of milk and fold gently.
  5. Fill a glass with ice and pour in 1 cup of cold brew or strong iced coffee, leaving about an inch of space at the top.
  6. Using a spoon, gently dollop the cold foam on top of the coffee, starting from the center and working outward to create an even cap.
  7. Sprinkle a tiny pinch of pumpkin pie spice on top. Serve immediately with a straw.
