Easy Cheesy Everything Bagel Breakfast Strata

A flavorful and easy breakfast strata using everything bagels, eggs, cheese, and cottage cheese, perfect for brunch or casual gatherings.

  • 4 large day-old everything bagels, cut into 1-inch cubes
  • 8 large eggs, room temperature
  • 2 cups (480 ml) whole milk or half-and-half
  • 1 cup (225 g) small-curd cottage cheese
  • 2 cups (200 g) shredded sharp cheddar cheese or cheddar-mozzarella blend
  • 34 green onions, chopped
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • 12 tablespoons everything bagel seasoning (optional)
  • 1 tablespoon butter, for greasing baking dish

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Cut everything bagels into 1-inch cubes. Toast lightly if not stale to prevent mushiness.
  3. In a large bowl, whisk together eggs, milk or half-and-half, cottage cheese, garlic powder, salt, and pepper until smooth and slightly frothy.
  4. In another bowl, toss bagel cubes with 1 ½ cups shredded cheese and chopped green onions.
  5. Spread half of the bagel-cheese mixture evenly in the baking dish. Pour half of the egg custard over the bagels, gently pressing down to soak.
  6. Repeat layering with remaining bagel mixture and custard.
  7. Sprinkle remaining ½ cup shredded cheese and everything bagel seasoning on top.
  8. Bake uncovered for 45-50 minutes until golden brown and a knife inserted in the center comes out clean.
  9. Let cool for 5-10 minutes before slicing and serving.

Notes

Use day-old bagels for best texture; toast fresh bagels lightly if needed. Room temperature eggs and dairy help custard blend smoothly. Avoid overmixing to keep texture. Let strata rest before slicing. Cover with foil if top browns too quickly. Variations include adding cooked sausage, bacon, or veggies. Can be made dairy-free or gluten-free with substitutions.
