These Easy Cheesy Bacon Ranch Pinwheels are the ultimate party appetizer—creamy, smoky, and packed with flavor. With just 15 minutes of prep and simple ingredients, they’re perfect for game day, potlucks, or any gathering.

Ingredients

Scale
  • 16 oz cream cheese, softened to room temperature
  • 1 packet (about 1 oz) ranch seasoning mix
  • 1 ½ cups shredded sharp cheddar cheese
  • 12 slices cooked bacon, crumbled
  • 45 green onions, thinly sliced
  • 45 large flour tortillas (burrito size)
  • Optional garnish: extra crumbled bacon, sliced green onions, or paprika

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge at least 30 minutes before starting. If forgotten, cut into cubes and microwave in 10-second bursts until soft but not hot.
  2. Cook and crumble the bacon: Cook bacon until crispy (bake at 400°F for 15-18 minutes). Let cool completely, then crumble into small pieces.
  3. Mix the filling: In a large mixing bowl, beat softened cream cheese with ranch seasoning mix until smooth and fluffy (about 2-3 minutes with an electric mixer). Scrape down sides halfway through.
  4. Add the cheese, bacon, and green onions: Fold in shredded cheddar, crumbled bacon, and sliced green onions with a spatula until evenly distributed. Taste and adjust seasoning if needed.
  5. Prepare the tortillas: Lay tortillas flat on a cutting board. Let them come to room temperature if cold. Warm in microwave for 10 seconds if needed.
  6. Spread the filling: Divide cream cheese mixture evenly among tortillas. Spread in a thin, even layer all the way to the edges, leaving about a half-inch border on one side.
  7. Roll the tortillas: Starting from the edge closest to you, roll the tortilla tightly but gently. Use fingers to keep filling tucked in. Press down lightly to seal at the end.
  8. Wrap and chill: Wrap each rolled tortilla tightly in plastic wrap, twisting ends like a candy wrapper. Refrigerate for at least 2 hours, preferably overnight.
  9. Slice and serve: Unwrap chilled rolls and place on cutting board. Use a sharp serrated knife to slice off uneven ends, then slice each roll into 1-inch pinwheels using a gentle sawing motion. Arrange on a platter and garnish if desired.

Notes

Chill time is crucial for clean slices. Use room temperature tortillas to prevent cracking. For best results, make the night before. Store leftovers in an airtight container with a paper towel for up to 3 days. Do not freeze.
