Instructions

  1. Prep your baking sheet: Line a large rimmed baking sheet with parchment paper, leaving some overhang on the sides. Set aside.
  2. Pop your popcorn: If using stovetop or air-popper, pop about 1/2 cup of kernels to get 8 cups of popped popcorn. Spread on the baking sheet and remove any unpopped kernels. Let cool completely.
  3. Melt the white chocolate: Place white chocolate wafers or chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring thoroughly between each interval, until mostly melted and smooth (about 2-3 intervals). Do not overheat.
  4. Combine popcorn and chocolate: Transfer cooled popcorn to a large mixing bowl. Pour melted white chocolate over popcorn and gently fold with a rubber spatula until every piece is coated (about 2 minutes).
  5. Spread the mixture: Dump chocolate-coated popcorn onto prepared baking sheet and spread into an even layer about 1/2 to 3/4 inch thick. Do not press down too hard.
  6. Add the toppings: While chocolate is still wet, scatter candy corn and peanuts (if using) evenly over the top. Press them in gently. Add Halloween sprinkles if using. Finish with a generous pinch of flaky sea salt.
  7. Let it set: Place baking sheet in the refrigerator for at least 30 minutes, or until chocolate is completely firm and snappy. For faster setting, use the freezer for 20 minutes.
  8. Break into pieces: Once set, lift parchment paper to remove bark from baking sheet. Break into irregular pieces.
