These peanut butter cup brownies feature a fudgy center with pockets of gooey peanut butter cups, combining rich chocolate and nutty flavors in a quick and easy dessert perfect for any occasion.

Ingredients

Scale
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 3/4 cup (95g) all-purpose flour, sifted
  • 1/2 cup (50g) unsweetened cocoa powder, sifted
  • 1/4 teaspoon salt
  • 10 to 12 regular-sized peanut butter cups, chopped roughly

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal. Lightly grease the pan.
  2. In a large bowl, combine melted unsalted butter, granulated sugar, and packed brown sugar. Whisk vigorously until smooth and slightly glossy, about 2 minutes.
  3. Add eggs one at a time, whisking well after each addition. Stir in pure vanilla extract. The batter will look shiny and thick.
  4. In a separate bowl, sift together all-purpose flour, unsweetened cocoa powder, and salt.
  5. Slowly fold the dry ingredients into the wet mixture using a spatula. Stop folding as soon as no streaks of flour remain; do not overmix.
  6. Fold in chopped peanut butter cups, reserving about one-third to sprinkle on top.
  7. Pour the batter into the prepared pan and smooth the top with a spatula. Sprinkle the reserved peanut butter cups evenly over the top.
  8. Bake for 25 to 30 minutes. Begin checking at 25 minutes by inserting a toothpick near the center; it should come out with a few moist crumbs but no wet batter.
  9. Cool the brownies completely in the pan on a wire rack for at least 1 hour before slicing.

Notes

Melt the butter instead of creaming it to keep the batter dense and moist. Dissolve sugars into warm butter for a glossy, fudgy texture. Avoid overmixing after adding flour to prevent toughness. Check brownies at 25 minutes to ensure fudgy centers by looking for moist crumbs on a toothpick. Cool completely before slicing to maintain texture. For extra fudge, add an egg yolk or reduce flour slightly. Use uneven chunks of peanut butter cups to keep pockets of gooey peanut butter.
