  • 1 cup steamed and pureed veggies (spinach, zucchini, or carrots)
  • 1/2 cup unsweetened cocoa powder (preferably Dutch-processed)
  • 1/2 cup granulated sugar or coconut sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (4 tablespoons) olive oil or coconut oil, melted
  • Optional: 1/2 cup dark chocolate chips or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking pan with parchment paper, leaving some overhang on the sides.
  2. Steam about 1 cup of your chosen vegetables until very soft. Let cool slightly, then puree until smooth. Set aside.
  3. Rinse and drain the black beans thoroughly. Add them to a food processor along with the pureed veggies and blend until completely smooth, about 2-3 minutes.
  4. In a large mixing bowl, whisk together the eggs, sugar, vanilla extract, and melted oil until combined and slightly frothy, about 2 minutes.
  5. Stir in the black bean and veggie puree to the wet ingredients, blending gently but thoroughly.
  6. In a separate bowl, sift together the cocoa powder, baking powder, and salt. Gradually fold these dry ingredients into the wet mixture using a spatula, being careful not to overmix.
  7. If using, fold in chocolate chips or nuts now for extra texture.
  8. Pour the batter into the prepared pan and smooth the top with a spatula. Tap the pan a couple of times on the counter to release any air bubbles.
  9. Bake for 25-30 minutes. Start checking at 25 minutes by inserting a toothpick in the center; a few moist crumbs should stick but no wet batter.
  10. Cool completely in the pan on a wire rack before lifting out and slicing.
