  • pounds (700g) baby potatoes (Yukon Gold or red potatoes)
  • 4 tablespoons (60g) unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh thyme leaves
  • 2 tablespoons (30ml) olive oil
  • Salt and pepper to taste
  • Optional: pinch of smoked paprika or chili flakes

Instructions

  1. Place 1½ pounds (700g) of baby potatoes in a large pot and cover with cold water by at least an inch. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for about 15-20 minutes, or until potatoes are fork-tender but not falling apart.
  2. Drain potatoes in a colander and let them sit for 5 minutes to steam dry.
  3. Preheat oven to 450°F (230°C).
  4. In a small bowl, mix 4 tablespoons (60g) softened unsalted butter, 3 minced garlic cloves, 1 tablespoon chopped parsley, and 1 tablespoon chopped thyme. Add a pinch of salt and pepper and stir until combined.
  5. Place the potatoes on a lined baking sheet. Using a potato masher or the bottom of a glass, gently press down on each potato until flattened to about ½ inch (1.25 cm) thick.
  6. Drizzle the smashed potatoes with 2 tablespoons (30ml) olive oil and sprinkle with salt and pepper. Add a pinch of smoked paprika if desired.
  7. Roast in the preheated oven for 25-30 minutes. Halfway through (around 15 minutes), brush or spoon the herb garlic butter generously over each potato. Return to oven and continue roasting until edges are golden brown and crispy.
  8. Once out of the oven, sprinkle flaky sea salt over the potatoes and serve hot.

Notes

Do not overboil potatoes; they should be tender but firm to hold shape when smashed. Let potatoes steam dry after boiling to remove excess moisture for better crispiness. Smash gently to increase surface area without breaking potatoes apart. Roast at high heat (450°F/230°C) for crispy edges. Brush herb garlic butter halfway through roasting for best flavor and texture. Avoid overcrowding the pan to ensure crispiness. For extra crispiness, flip potatoes halfway through roasting. To reheat, use a hot oven at 400°F (200°C) for 8-10 minutes; avoid microwaving to prevent sogginess.
