  • 4 slices American cheese, halved

  • A handful of leafy lettuce or baby spinach
  • 8 pickle slices (optional)
  • ½ cup mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon prepared horseradish
  • 1 teaspoon Worcestershire sauce
  • ½ teaspoon smoked paprika
  • ¼ teaspoon garlic powder
  • A few dashes hot sauce (optional)
  • 1 teaspoon fresh lemon juice
  • Salt and pepper, to taste

Instructions

  1. Make the tangy comeback sauce: In a bowl, combine mayonnaise, ketchup, horseradish, Worcestershire sauce, smoked paprika, garlic powder, and hot sauce if using. Add fresh lemon juice, season with salt and pepper, mix well, and refrigerate.
  2. Prep the buns and toppings: Slice mini slider buns in half and toast lightly. Thinly slice red onions and wash lettuce or baby spinach. Set aside pickles.
  3. Form the beef balls: Divide ground beef into 8 equal portions and roll into loose balls. Season each with salt and pepper.
  4. Heat the skillet: Place cast iron skillet or griddle over medium-high heat, add vegetable oil, and heat until smoking hot.
  5. Smash the patties: Place 2-3 beef balls on the skillet spaced apart. Press each ball firmly to about ¼-inch thickness and hold for 10 seconds to set crust. Cook 2-3 minutes.
  6. Flip and cheese: Flip patties carefully, add half a slice of American cheese on each, and cook another 1-2 minutes until edges are crispy and cheese melts.
  7. Assemble sliders: Spread comeback sauce on bottom bun, layer with lettuce, patty, sliced onions, and pickles. Cap with top bun.
