  • 1 lemon, zested and juiced

  • 1 pound baby potatoes, halved

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, combine 2 tablespoons olive oil, lemon zest, lemon juice, minced garlic, thyme, rosemary, about 1 teaspoon salt, and about ½ teaspoon pepper. Whisk until well blended.
  3. Pat the chicken thighs dry with paper towels. Toss them in the marinade, ensuring each piece is well coated. Let sit for 10–15 minutes at room temperature.
  4. In a separate bowl, toss the halved baby potatoes with 1 tablespoon olive oil, smoked paprika, salt, and pepper until evenly coated.
  5. Line a large rimmed baking sheet with parchment paper or a silicone mat. Spread the potatoes out on one side in a single layer, leaving space for the chicken.
  6. Place the marinated chicken thighs skin side up on the pan, spaced apart for air circulation.
  7. Roast in the preheated oven for 25 minutes.
  8. While roasting, toss the trimmed asparagus with 1 tablespoon olive oil, salt, and pepper.
  9. After 25 minutes, remove the pan and scatter the asparagus around the chicken and potatoes. Return to the oven.
  10. Roast for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C), the skin is crispy and golden, potatoes are tender and browned, and asparagus is tender-crisp.
  11. Remove the pan and let the chicken rest for 5 minutes before serving.
  12. Optional: For extra crispy skin, broil for 2–3 minutes at the end, watching closely to avoid burning.

Pat chicken dry before marinating to ensure crispy skin. Roast at high heat (425°F) for best results. Add asparagus halfway through roasting to keep it tender-crisp. Rest chicken after cooking to lock in juices. Optional broiling at the end can enhance skin crispiness. Can substitute boneless skin-on chicken breasts but reduce cooking time to avoid drying out.
