Instructions

  1. Preheat your oven to 425°F (220°C). Place the rack in the middle position.
  2. Wash the delicata squash thoroughly. Slice off both ends (about ¼ inch from each tip). Then, slice the squash crosswise into ½-inch thick rings (about 8-10 rings).
  3. Use a small spoon or your fingers to gently scoop out the seeds and stringy pulp from the center of each ring.
  4. In one shallow bowl, whisk together the olive oil, garlic powder, smoked paprika, salt, and pepper. In a second shallow bowl, combine the finely grated Parmesan cheese and panko breadcrumbs.
  5. Working one ring at a time, dip each squash ring into the oil mixture, turning to coat both sides. Let any excess drip off. Then, place the ring into the Parmesan-panko mixture, pressing gently on both sides to ensure the coating adheres. Place the coated ring on a parchment-lined baking sheet. Repeat with all rings, leaving space between each.
  6. Bake for 10 minutes. Carefully flip each ring using a spatula. Return to the oven and bake for another 8–10 minutes, until the second side is deeply golden and the squash is tender when pierced with a fork (total 18–20 minutes).
  7. Let the rings rest on the baking sheet for 2 minutes. Transfer to a serving platter, garnish with fresh parsley or chives if desired, and serve immediately.

Don’t skip the oil step—it’s the glue for the crust. Grate your own Parmesan for best results. Don’t overcrowd the pan; use two baking sheets if doubling. Flip carefully with a thin spatula. Serve immediately for maximum crispiness. For an air fryer method, cook at 375°F (190°C) for 8–10 minutes, flipping halfway. Leftovers can be stored in the fridge for up to 2 days and reheated in the oven or air fryer.
