  • 1 teaspoon lime zest
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 small garlic clove, minced
  • Pinch of salt and pepper

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a medium bowl, combine olive oil, smoked paprika, garlic powder, salt, and pepper. Toss the shrimp until evenly coated and let sit for 10 minutes.
  3. If using wooden skewers, soak them in water for at least 30 minutes before threading the shrimp.
  4. Thread 4-5 shrimp onto each skewer, leaving small spaces between pieces.
  5. In a small bowl, mix softened butter, lime juice, lime zest, minced garlic, chopped cilantro, salt, and pepper until smooth.
  6. Preheat grill or grill pan to medium-high heat (about 400°F). Oil the grates or pan to prevent sticking.
  7. Place shrimp skewers on the grill and cook for 2-3 minutes per side, brushing occasionally with cilantro lime butter.
  8. Remove from grill when shrimp are opaque with crispy, slightly charred edges.
