  • 4 ears fresh corn on the cob, husked and cleaned
  • 4 tablespoons unsalted butter, softened
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt, or to taste
  • Juice of 1 lime (about 2 tablespoons)
  • 2 tablespoons fresh cilantro, finely chopped (optional)

Instructions

  1. Prepare the Corn Ribs: Husk and clean 4 ears of fresh corn. Stand each ear upright on a cutting board and carefully slice lengthwise into quarters or sixths, depending on cob size, to create ribs.
  2. Make the Chili Lime Butter: In a small bowl, combine 4 tablespoons softened unsalted butter, 1 teaspoon chili powder, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and the juice of 1 lime. Mix thoroughly until smooth.
  3. Preheat the Grill: Heat your grill to medium-high (about 400°F). If using a grill pan, preheat it over medium-high heat.
  4. Grill the Corn Ribs: Place the corn ribs flat on the grill, cut side down. Grill for 3-4 minutes per side until char marks appear and kernels caramelize. Use tongs to flip carefully.
  5. Brush with Butter: Remove ribs from heat and immediately brush generously with the chili lime butter. Garnish with chopped fresh cilantro if desired.
  6. Serve warm, ideally right off the grill.

Notes

If corn ribs are thick, parboil corn for 3 minutes before slicing to speed grilling. Apply butter after grilling to avoid burning. Keep grill clean and watch ribs closely to prevent burning. Leftovers can be reheated in oven or air fryer for crispness; avoid microwaving.
